Ingredients

For the Mousse
  • 1 cup Full-Fat Cottage Cheese Choose a brand with minimal additives for the best texture.
  • 1/2 cup Creamy Natural Peanut Butter Opt for varieties made from just peanuts (and salt) for purity.
  • 2 tablespoons Honey or Maple Syrup Adjust according to your sweetness preference.
  • 1 teaspoon Vanilla Extract Always choose pure extract for the best taste.
  • 1/4 teaspoon Salt Balances sweetness and elevates flavors.
  • 1-2 tablespoons Milk Can be dairy or non-dairy based on preference.
For Optional Toppings
  • Fresh Fruits Berries or bananas are great options.
  • Chopped Nuts Almonds or walnuts work wonderfully.
  • Chocolate Shavings Dark chocolate pairs beautifully with the peanut butter flavor.
  • Granola Consider this delightful topping option.

Equipment

  • food processor
  • Fine Mesh Sieve

Method

Instructions
  1. Begin by straining the full-fat cottage cheese using a fine mesh sieve. Allow it to drain for about 15 minutes to remove excess liquid, which will enhance the creaminess.
  2. In a food processor, combine the strained cottage cheese, creamy natural peanut butter, honey or maple syrup, and vanilla extract. Add a pinch of salt if desired. Blend for approximately 45 to 60 seconds until smooth and velvety.
  3. Check the texture of your mousse; if it's too thick, gradually add 1 to 2 tablespoons of milk while blending. Continue blending for another 15 to 30 seconds until light and airy.
  4. Transfer the blended mousse into a bowl and cover. Place it in the refrigerator for 15 to 20 minutes, allowing the flavors to meld beautifully.
  5. Once chilled, spoon the mousse into small bowls or jars. Top with fresh fruits, chopped nuts, honey, or chocolate shavings before serving.
