Ingredients
  

For the Crust
  • 1 cup Graham Cracker Crumbs Optional gluten-free.
  • 2 tablespoons Cocoa Powder Unsweetened.
  • 1/4 cup Brown Sugar
  • 1/2 cup Unsalted Butter Melted.
For the Filling
  • 16 oz Cream Cheese Full-fat.
  • 1 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 3 large Eggs
  • 1 cup Brewed Espresso or Strong Coffee Freshly brewed and cooled.
  • 1 tablespoon Coffee Liqueur Optional.
  • 1/4 teaspoon Salt
For the Garnish
  • 1/4 cup Chocolate Shavings or Coffee Beans For decoration.

Method
 

Preheat and Prepare the Crust
  1. Preheat your oven to 325°F (160°C). Combine graham cracker crumbs, cocoa powder, brown sugar, and melted butter. Press this mixture into the bottom of a springform pan to create the crust. Bake for 10 minutes and cool.
Mix the Cream Cheese Filling
  1. Beat the cream cheese until smooth. Gradually add sugar, vanilla extract, and salt until fully incorporated.
Add Eggs
  1. Add eggs one at a time, mixing just until combined after each.
Incorporate Coffee and Liqueur
  1. Slowly mix in cooled coffee and optional liqueur.
Bake the Cheesecake
  1. Pour the filling over the crust and bake for 55-60 minutes, until edges are set.
Cooling Process
  1. Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
Prepare for Serving
  1. Release from the pan, garnish, slice, and serve.
