Fudge Sauce Preparation
- In a medium saucepan, melt 1 cup of chopped semi-sweet chocolate and 1 cup of thickened cream over low heat, stirring continuously for about 5 minutes until smooth.
- Sift in 1/4 cup of cocoa powder and pour in 1/3 cup of golden syrup. Stir vigorously for about 2 minutes until glossy.
- Mix in 1/2 cup of brown sugar, 1 teaspoon of vanilla essence, and 2 tablespoons of salted butter. Stir on low heat for 5–10 minutes until thickened.
- Remove from heat and let cool for about 10 minutes before transferring to a heatproof container.
Sundae Assembly
- Swirl some of the cooled fudge sauce in the bottom of sundae glasses.
- Scoop generous servings of rich chocolate ice cream into each glass.
- Top each sundae with a dollop of freshly whipped cream, drizzle more fudge sauce, and sprinkle with chopped nuts and crispy chocolate wafers.
