Method
 

Fudge Sauce Preparation
  1. In a medium saucepan, melt 1 cup of chopped semi-sweet chocolate and 1 cup of thickened cream over low heat, stirring continuously for about 5 minutes until smooth.
  2. Sift in 1/4 cup of cocoa powder and pour in 1/3 cup of golden syrup. Stir vigorously for about 2 minutes until glossy.
  3. Mix in 1/2 cup of brown sugar, 1 teaspoon of vanilla essence, and 2 tablespoons of salted butter. Stir on low heat for 5–10 minutes until thickened.
  4. Remove from heat and let cool for about 10 minutes before transferring to a heatproof container.
Sundae Assembly
  1. Swirl some of the cooled fudge sauce in the bottom of sundae glasses.
  2. Scoop generous servings of rich chocolate ice cream into each glass.
  3. Top each sundae with a dollop of freshly whipped cream, drizzle more fudge sauce, and sprinkle with chopped nuts and crispy chocolate wafers.
