Step-by-Step Instructions
  1. Dissolve the yeast into warm water and let it sit for about 5 minutes until frothy.
  2. Combine flour, sugar, and salt in a bowl. Mix in cold butter until resembling coarse crumbs.
  3. Add milk, yeast mixture, and egg yolks to the dry ingredients and stir until a soft dough forms.
  4. Cover the bowl with plastic wrap and refrigerate for 8 to 24 hours.
  5. Divide the chilled dough into four equal portions and flatten each to a rectangle about 1/4 inch thick. Sprinkle with cinnamon.
  6. Cut the rectangles into strips, twist, and coil them into spirals.
  7. Beat cream cheese, sugar, and egg yolk until smooth; fill pastries with this mixture.
  8. Place pastries on a baking sheet and let rise for about 45 minutes.
  9. Preheat oven to 350°F (175°C).
  10. Brush pastries with egg wash and bake for 15 to 20 minutes until golden brown.
  11. Allow to cool slightly and brush with maple syrup before serving.
