- Dissolve the yeast into warm water and let it sit for about 5 minutes until frothy.
- Combine flour, sugar, and salt in a bowl. Mix in cold butter until resembling coarse crumbs.
- Add milk, yeast mixture, and egg yolks to the dry ingredients and stir until a soft dough forms.
- Cover the bowl with plastic wrap and refrigerate for 8 to 24 hours.
- Divide the chilled dough into four equal portions and flatten each to a rectangle about 1/4 inch thick. Sprinkle with cinnamon.
- Cut the rectangles into strips, twist, and coil them into spirals.
- Beat cream cheese, sugar, and egg yolk until smooth; fill pastries with this mixture.
