Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.

Mousse Layers
- Beat cream cheese with powdered sugar for both vanilla and chocolate mixtures.
- Bloom gelatin, then whip heavy cream and fold into both cream cheese mixtures.
Assembly
- Spread chocolate mousse over the cooled cake, then layer vanilla mousse on top.
- Chill the assembled cake for at least 1 hour.
Ganache Preparation
- Heat cream and butter, pour over chocolate chips, stir until smooth.
- Pour ganache over the chilled cake and decorate with white chocolate ganache.
Final Chilling
- Refrigerate the decorated cake for at least 30 minutes before serving.
