Step-by-Step Instructions
  1. Season the chuck roast with salt and black pepper, ensuring an even coating.
  2. Add diced potatoes, sliced carrots, and diced yellow onion around the roast in the crockpot.
  3. Combine beef stock, Worcestershire sauce, minced garlic, onion powder, dried oregano, and thyme in a bowl. Pour over the roast and vegetables.
  4. Cover and set to low for 7-8 hours or high for 6-7 hours.
  5. Mix cornstarch with water until smooth, then add to the crockpot to thicken the gravy 15 minutes before serving.
  6. If using, stir in sliced mushrooms for an additional 10-15 minutes of cooking.
  7. Serve warm, ladling out the tender beef and vegetables with gravy.
