For the Cheese Filling
  • 1 cup Monterey Jack Cheese Melts beautifully with ground beef.
  • 1 cup Sharp Cheddar Cheese Adds bold flavor contrast.
For the Tortillas
  • 10 Corn Tortillas Flour tortillas can be used for soft tacos.
For Frying
  • 3 cups Vegetable Oil Use peanut or corn oil for high smoke point.

Equipment

  • large skillet
  • tongs
  • Thermometer

Method

Step-by-Step Instructions
  1. In a large skillet, heat the pan over medium heat. Add lean ground beef, diced white onion, and jalapeño, cooking for about 5-7 minutes, or until the beef is browned and the onion is tender.
  2. Once the meat is browned, drain any excess grease from the skillet. Sprinkle in Slap Ya Mama spice blend, garlic powder, cumin, black pepper, and red pepper flakes.
  3. Clean the skillet or use a deep pot, and pour in enough vegetable oil to submerge the tortillas, about 1-2 inches deep. Heat the oil to 375°F over medium-high heat.
  4. Using tongs, dip a corn tortilla into the hot oil, flipping it quickly to soften it, then add a couple tablespoons of the beef filling and a sprinkle of cheese to one side of the tortilla. Fold and fry until golden brown, about 2-3 minutes per side.
  5. Once golden brown and crispy, remove the tacos from oil and place on a paper towel-lined plate to drain excess oil. Cool slightly before serving with your favorite toppings.
