Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 200°C (or 180°C for fan-assisted cooking).
  2. Wash and scrub the baby potatoes thoroughly and cut them in half lengthwise.
  3. In a large mixing bowl, combine the halved potatoes with melted salted butter, grated Parmesan, oregano, garlic powder, onion powder, salt, and black pepper. Toss well.
  4. Line a baking sheet with parchment paper and place the potato halves cut side down, ensuring they are spaced apart.
  5. Bake the potatoes in the preheated oven for 20-25 minutes, until they start to soften and brown slightly.
  6. Flip each potato half cut side up and sprinkle more grated Parmesan, if desired.
  7. Return to the oven and bake for another 15-20 minutes until golden brown and crispy.
  8. Cool slightly and serve hot, preferably with herb dip.
