Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine crumbled feta cheese, fresh dill, chopped mint, lemon zest, and black pepper in a mixing bowl.
- Layer phyllo pastry sheets, brushing with olive oil between each sheet.
- Cut the layered phyllo into four equal strips.
- Place about one tablespoon of feta filling at one end of each phyllo strip.
- Fold the sides and roll tightly from the filled end to form a cylinder.
- Place rolls seam-side down on the baking sheet and brush tops with olive oil.
- Bake for 18-20 minutes until golden brown.
- Combine honey, chili flakes, and lemon juice in a small saucepan over low heat until runny.
- Drizzle warm sweet chili honey over baked rolls and serve.
