- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

- Press the cottage cheese with a kitchen towel to remove excess moisture.

- Combine cottage cheese, Parmesan, salt, and pepper in a mixing bowl. Add herbs if desired.

- Dollop small amounts of the mixture onto the baking sheet, leaving space in between.

- Flatten each dollop into thin rounds, approximately 1/8 inch thick.

- Bake for 15–25 minutes until edges are golden brown and centers are crisp.

- Cool on the tray for a few minutes, then re-bake if they are soft.
