- Prepare the salmon by patting the cubes dry and seasoning with paprika, garlic powder, onion powder, salt, and pepper. Optionally, allow to marinate for 10-15 minutes.
- Heat olive oil in a large skillet over medium-high heat. Cook salmon cubes for 4-5 minutes until golden and crispy.
- In the same skillet, add more olive oil and sauté minced garlic and grated ginger for 1-2 minutes.
- Make the sauce by pouring in soy sauce, rice vinegar, and honey, stirring and simmering for 3-4 minutes until thickened.
- Combine salmon with the sauce in the skillet, tossing gently to coat. Heat for an additional minute.
- Serve the salmon bites over steamed rice, garnished with sesame seeds and chives.
