- Preheat the oven to 200°F (93°C) to keep the chicken warm while cooking.
- Line a baking sheet with parchment paper and place a cooling rack on top.
- Whisk together egg whites, cornstarch, and a pinch of salt until fluffy. Coat chicken pieces in the mixture and marinate for 10-15 minutes.
- Heat about 2 inches of oil in a deep skillet or wok to 350-360°F (177-182°C).
- Fry marinated chicken in batches for 3-4 minutes per batch until golden brown.
- Remove fried chicken and place on the prepared baking sheet to keep warm.
- Combine honey, minced garlic, soy sauce, and black pepper in a pot over medium heat. Simmer for 1-2 minutes until thickened.
- Add fried chicken to the pot and toss to coat in the honey garlic sauce.
