  1. Begin by preparing your workspace. Cut fresh salmon into bite-sized pieces, aiming for uniform sizes for even cooking. Arrange three shallow dishes with flour, beaten eggs, and panko breadcrumbs in that order.
  2. Take each piece of salmon and dredge it in flour, then dip it in the egg, allowing excess to drip off before coating in panko breadcrumbs.
  3. In a large frying pan, pour enough oil to cover the bottom, about 1/4 inch deep, and heat over medium-high until it reaches about 180°C (350°F).
