Ingredients
  

For the Salad
  • 2 large Cucumbers English cucumbers are preferred
  • 3 medium Tomatoes or cherry tomatoes
  • 0.5 small Red Onion finely sliced
  • 2 tablespoons Fresh Herbs (Parsley or Basil) can substitute with mint
For the Dressing
  • 3 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Red Wine Vinegar or Lemon Juice based on your preference
  • to taste Salt & Pepper for seasoning
Optional Extras
  • 0.5 cup Feta Cheese crumbled
  • 1 small Garlic minced, optional

Method
 

Preparation
  1. Wash and slice 2 large cucumbers into thin rounds.
  2. Cut 3 medium tomatoes into bite-sized pieces or halve cherry tomatoes.
  3. Finely slice ½ small red onion and place all vegetables in a large mixing bowl.
  4. Chop about 2 tablespoons of fresh herbs and add to the bowl, stirring gently to combine.
Dressing
  1. In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of red wine vinegar or lemon juice, and a pinch of salt and pepper.
  2. If desired, mince a small clove of garlic and add to the dressing.
Combine and Serve
  1. Pour the dressing over the cucumber and tomato mixture, tossing gently to coat.
  2. If using, crumble feta cheese over the top and mix gently.
  3. Cover and chill in the refrigerator for 10-15 minutes before serving cold.
