Preparation
- Wash and slice 2 large cucumbers into thin rounds.
- Cut 3 medium tomatoes into bite-sized pieces or halve cherry tomatoes.
- Finely slice ½ small red onion and place all vegetables in a large mixing bowl.
- Chop about 2 tablespoons of fresh herbs and add to the bowl, stirring gently to combine.
Dressing
- In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of red wine vinegar or lemon juice, and a pinch of salt and pepper.
- If desired, mince a small clove of garlic and add to the dressing.
Combine and Serve
- Pour the dressing over the cucumber and tomato mixture, tossing gently to coat.
- If using, crumble feta cheese over the top and mix gently.
- Cover and chill in the refrigerator for 10-15 minutes before serving cold.
