  • 2 tablespoons flour or cornstarch for gluten-free
  • 1 cup milk or cream; use plant-based milk for vegan

  • ½ cup Parmesan cheese or nutritional yeast for vegan
  • 1-2 tablespoons fresh herbs such as thyme or basil
  • ¼ cup white wine optional; omit or use vegetable broth

Steps
  1. Melt the butter over low heat in a medium saucepan. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the flour to the pan and whisk to combine, cooking for 1-2 minutes to form a roux.
  3. Gradually pour in the milk while continuously whisking. Increase heat to medium and stir for 3-5 minutes until thickened.
  4. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
  5. If using white wine, pour it in now and stir to deglaze the pan. Allow to simmer for 1 minute.
  6. Adjust the thickness by adding more milk if necessary, or simmer for additional time to thicken.
  7. Mix in the fresh herbs and season with salt and pepper to taste.
