  • 1 cup Oat Milk or Soy Milk Unsweetened preferred
  • 2 teaspoons Cornstarch Omit if using plant-based cream
For the Broth
  • 1 tablespoon Sake or Mirin Optional

  1. Prepare Noodles: Microwave the frozen udon noodles for 60 seconds to loosen, or cook in boiling water briefly until heated. Drain and set aside.
  2. Cook Aromatics: Melt vegan butter in a large skillet, add green onion whites and minced garlic, sauté for about 2 minutes.
  3. Sauté Mushrooms: Add sliced shiitake and shimeji mushrooms; sauté on high heat for 2-3 minutes until seared.
  4. Add Liquid Ingredients: Optionally add sake or mirin, then pour in oat or soy milk, stir in miso paste and soy sauce, bringing to a gentle boil, then simmer for 3-4 minutes.
  5. Combine Noodles: Add prepared udon noodles to the skillet, gently toss to coat them with the sauce.
  6. Thicken Sauce: Mix cornstarch with water to create a slurry; add to skillet while stirring, cook until the sauce thickens for about 2 minutes.
  7. Final Touches: Adjust seasoning if necessary, remove from heat, garnish with green onion tops, and serve immediately.
