Ingredients
  

Filling
  • 8 oz Mushrooms use baby bella or cremini
  • 5 oz Spinach drain well
  • 8 oz Cream Cheese substitute with vegan cream cheese for a dairy-free version
  • 1 cup Mozzarella/Cheddar/Goat Cheese goat cheese can be replaced with plant-based alternatives
  • 1 medium Onions finely chopped
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Pepper
Pastry
  • 1 sheet Puff Pastry for gluten-free, use gluten-free puff pastry alternatives

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions and garlic for 3-4 minutes.
  3. Add chopped mushrooms and cook for 5-7 minutes until softened.
  4. Stir in fresh spinach and cook for another 2-3 minutes. Season with salt and pepper.
  5. Mix the cooled filling with cream cheese and cheese of your choice.
  6. Roll out puff pastry and cut into 24 squares.
  7. Fill each pastry square with a teaspoon of filling, fold and seal edges.
  8. Brush the tops with beaten egg for a golden finish.
  9. Bake for 20-25 minutes or until golden brown.
  10. Let cool slightly before serving with your favorite dipping sauce.
