Step-by-Step Instructions
  1. Prepare Cheese: Start by cubing the White American cheese into ½" to ¾" pieces.
  2. Combine Liquids: In a mixing bowl, whisk together the whole milk, heavy cream, and cornstarch until smooth.
  3. Mix Ingredients: In a medium saucepan, combine the cubed cheese, the milk mixture, diced green chilies (with juice), pickled jalapeños, jalapeño juice, ground cumin, garlic powder, onion powder, and optional cayenne pepper. Stir gently.
  4. Melt Over Low Heat: Place the saucepan over low heat, stirring continuously to prevent sticking. This usually takes about 10-15 minutes.
  5. Whisk Until Smooth: Stir constantly until the dip is totally melted into a silky texture.
  6. Adjust Consistency: If too thick, slowly stir in extra milk until desired texture is achieved.
  7. Taste & Season: Before serving, taste the dip and adjust seasonings as needed.
  8. Serve Warm: Transfer to a serving bowl and garnish with fresh cilantro. Serve immediately.
