Ingredients
  

For the Sauce
  • 2 pieces Poblano Peppers Roasted
  • 1 tablespoon Olive Oil Can substitute with any cooking oil
  • 1 medium Onion Chopped
  • 1 piece Jalapeño or Serrano Pepper Optional
  • 3 cloves Garlic Minced
  • 4 cups Spinach Leaves Fresh
  • 1 bunch Cilantro Fresh
  • 1 cup Sour Cream or Crema Mexicana
  • 1 cube Chicken or Vegetable Bouillon
  • 1 cup Milk or Half and Half Adjust for desired consistency
  • 4 ounces Cream Cheese For thickness
For the Pasta
  • 12 ounces Dry Spaghetti Gluten-free pasta can be used
Seasoning
  • to taste Salt
  • to taste Ground Black Pepper
For Topping (Optional)
  • 1 bunch Chopped Cilantro For garnish
  • 1 cup Crumbled Cotija Cheese or Queso Fresco Omit for dairy-free
  • 1/2 cup Pepitas For added crunch

Method
 

Preparation Steps
  1. In a large pot, fill with water and add a generous amount of salt. Bring to a rolling boil and cook spaghetti according to package instructions until al dente.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and jalapeño, sauté for 3-4 minutes until onion is translucent.
  3. Add minced garlic and fresh spinach to the skillet, cooking for an additional 2-3 minutes until spinach wilts.
  4. Transfer mixture to a blender with roasted poblano peppers, cilantro, sour cream, bouillon, and milk. Blend until smooth.
  5. Return sauce to the skillet over low heat. Stir in cream cheese until melted and incorporated; season with salt and pepper.
  6. Add drained spaghetti to the sauce, tossing to coat. If too thick, add reserved pasta water gradually until desired creaminess is achieved.
  7. Serve hot, garnished with optional toppings.
