For Thinning the Sauce
  • 1 cup Pasta Cooking Liquid reserved from cooking pasta

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente, usually around 8–10 minutes. Reserve about a cup of the pasta cooking water before draining.
  2. In a blender, add the cottage cheese, fresh basil leaves, lemon juice, and peeled garlic cloves. Blend until smooth and creamy, about 1-2 minutes.
  3. In a large mixing bowl, combine the drained pasta and the blended sauce. Toss gently and add reserved pasta water as needed for consistency.
  4. Plate the pasta immediately for the best taste. Optionally garnish with fresh basil or Parmesan cheese.
