  • 1 cup Heavy Cream or half-and-half
  • 1-2 cups Shredded Cheddar Cheese or Monterey Jack

  • 1 piece Onion optional
  • 3 cloves Garlic

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil or butter in a large skillet over medium heat.
  2. Add 1 diced onion and 3 minced garlic cloves; sauté for 2-3 minutes.
  3. Stir in 2 cups of cooked, diced chicken, 2-3 diced chipotle peppers, and 1 tablespoon of adobo sauce; cook for 1-2 minutes.
  4. Pour in 4 cups of chicken broth and 1 cup of heavy cream; bring to a gentle simmer.
  5. Add 8 ounces of uncooked penne and cook for 10-12 minutes, stirring occasionally.
  6. Reduce heat to low and stir in 1-2 cups of shredded cheddar cheese until melted.
  7. Taste and adjust seasoning with salt and pepper; let sit for about 2 minutes before serving.
