Step-by-Step Instructions for Chicken Cauliflower Rice Casserole
  1. Preheat your oven to 375°F (190°C).
  2. Cook raw chicken by boiling or grilling until fully cooked, about 15-20 minutes. Shred into bite-sized pieces.
  3. In a large skillet, heat olive oil over medium heat. Sauté cauliflower rice for 5-7 minutes until tender and golden.
  4. Combine sautéed cauliflower rice, shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper in a bowl. Stir until smooth.
  5. Grease a 9x13-inch baking dish and pour the mixture into it, spreading evenly.
  6. Sprinkle the remaining cheddar cheese on top and bake uncovered for 20-25 minutes until cheese is melted and golden.
  7. Let cool for 5 minutes before serving. Optionally garnish with fresh herbs.
