Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil, then add bow tie pasta and cook until al dente, about 8-10 minutes. Drain and drizzle with olive oil.
  2. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add 2-3 cloves of minced garlic and sauté for about 30 seconds.
  3. Add cubed chicken breasts, sliced red and yellow bell peppers, and Cajun seasoning to the skillet. Cook for 4-5 minutes until the chicken is no longer pink.
  4. Reduce heat to medium-low, stir in 1 cup of milk and 4 ounces of softened cream cheese until the sauce is smooth.
  5. Add the cooked pasta to the skillet and toss with the sauce for about 2 minutes. Mix in ½ cup of freshly grated Parmesan cheese.
  6. Serve garnished with extra Parmesan cheese and Cajun seasoning. Optionally serve with garlic bread or salad.
