- Preheat your oven to 350°F (175°C) and coat a 9x13 inch baking dish with cooking spray.
- Bring salted water to a boil in a large pot. Cook broccoli for 4 minutes until bright green and slightly crisp-tender, then drain and rinse under cold water.
- In a large skillet, melt 2 tablespoons of butter and sauté cremini mushrooms and yellow onion for 4 minutes.
- Sprinkle flour into the skillet, whisking for about a minute to form a roux. Gradually whisk in 2 cups of milk and ½ cup half-and-half until thickened.
- Combine cooked broccoli, sautéed vegetables, cream sauce, beaten egg, half of the cheddar cheese, and some breadcrumbs in a mixing bowl.
- Pour the mixture into the baking dish, top with remaining breadcrumbs, melted butter, and extra cheddar cheese.
- Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.
