Ingredients
  

For the Pasta
  • 8 oz Dry Pasta Choose a thicker pasta like spaghetti or fusilli.
For the Sauce
  • 2 medium Ripe Avocados Make sure they are fully ripe.
  • 1 cup Fresh Basil Leaves Substitute with parsley if desired.
  • 2 cups Baby Spinach Leaves Can be swapped with kale for variety.
  • 2 cloves Garlic Fresh garlic preferred; can use powder if necessary.
  • 2 tbls Freshly Squeezed Lemon Juice Lime juice makes a great alternative.
  • 1 tsp Kosher Salt Adjust according to your preference.
  • 2 tbls Olive Oil Any neutral oil can be used as a substitute.

Method
 

Cooking Instructions
  1. Cook pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Stir occasionally.
  2. Scoop avocados into a blender with basil, spinach, garlic, lemon juice, and salt. Blend until smooth, drizzle in olive oil.
  3. Drain the pasta in a colander and return to a large bowl.
  4. Pour the avocado sauce over pasta and toss to coat. Serve immediately.
