Step-by-Step Instructions for Cream of Celery Soup
  1. Melt butter in a large pot over medium-high heat, then sauté onion and ⅔ of the chopped celery until soft.
  2. Sprinkle in flour, stir until smooth, then gradually add chicken stock and bay leaves; bring to boil then simmer for 10 minutes.
  3. Remove bay leaves, use an immersion blender to puree soup until smooth.
  4. Stir in remaining chopped celery, simmer for an additional 5 minutes until tender.
  5. Add heavy cream, season with salt and black pepper, and add lemon juice just before serving.
