- Begin by pouring 2 cups of apple cider into a medium-sized saucepan over medium heat. Allow it to simmer and reduce for about 15–20 minutes until it thickens and condenses to approximately 1/2 cup. Set it aside to cool completely.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 3/4 cup of sugar, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, and 1/2 teaspoon of salt. Optional: add a pinch of nutmeg.
- In a separate bowl, beat together 1 large egg, 1/4 cup of melted butter, 1 teaspoon of vanilla extract, and your cooled reduced apple cider. Mix until smooth.
- Gradually pour the wet mixture into the dry ingredients. Gently fold the mixtures together until just combined.
- Flour your work surface and roll out the dough to about 1/2 inch thickness. Cut out donut shapes and place them on a parchment-lined baking sheet.
- In a deep skillet or Dutch oven, pour in about 2 inches of oil and heat it to 350°F over medium-high heat. Monitor the temperature.
- Carefully slide a few donuts into the skillet and fry for about 2–3 minutes on each side until golden brown. Use a slotted spoon to turn them gently.
- Remove the donuts and drain them on a wire rack. While warm, toss them in a mixture of 1/2 cup sugar and 1 tablespoon cinnamon until fully coated.
