Instructions
  1. Heat the oil in a large pot or Dutch oven over medium heat for 1-2 minutes until shimmering.
  2. Add chopped yellow onion, sauté for 5-7 minutes until translucent and soft, then add minced garlic and cook for an additional minute.
  3. Incorporate ground turkey, break apart as it cooks for 7-10 minutes until browned, drain excess grease.
  4. Sprinkle in chili powder, cumin, smoked paprika, cayenne pepper, oregano, cinnamon, salt, and pepper; stir for an additional minute.
  5. Stir in pumpkin puree, great northern beans, cannellini beans, and diced tomatoes with juices.
  6. Pour in chicken broth, increase heat to bring to a gentle simmer, cover and let simmer for 30 minutes to 1 hour.
  7. In the last 10 minutes, stir in frozen corn and simmer uncovered.
  8. Taste and adjust seasonings as needed.
  9. Ladle the chili into bowls and garnish with cilantro, sour cream or Greek yogurt, cheddar cheese, and lime wedges.
