- Heat the oil in a large pot or Dutch oven over medium heat for 1-2 minutes until shimmering.
- Add chopped yellow onion, sauté for 5-7 minutes until translucent and soft, then add minced garlic and cook for an additional minute.
- Incorporate ground turkey, break apart as it cooks for 7-10 minutes until browned, drain excess grease.
- Sprinkle in chili powder, cumin, smoked paprika, cayenne pepper, oregano, cinnamon, salt, and pepper; stir for an additional minute.
- Stir in pumpkin puree, great northern beans, cannellini beans, and diced tomatoes with juices.
- Pour in chicken broth, increase heat to bring to a gentle simmer, cover and let simmer for 30 minutes to 1 hour.
- In the last 10 minutes, stir in frozen corn and simmer uncovered.
- Taste and adjust seasonings as needed.
- Ladle the chili into bowls and garnish with cilantro, sour cream or Greek yogurt, cheddar cheese, and lime wedges.
