Preparation Steps
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and cook for an additional minute, stirring constantly until aromatic.
  3. Pour in 4 cups of vegetable broth, add diced potatoes and sliced carrots. Bring to a boil, then simmer for 10-15 minutes until tender.
  4. Stir in 1 cup of frozen pierogi and cook for another 5-7 minutes until heated through.
  5. Add 1 cup of chopped fresh dill, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir well to combine all flavors.
  6. Ladle the soup into bowls and add a dollop of sour cream on top if desired.
