- Preheat your oven to 350°F (176°C) and prepare your muffin tin by greasing it well.
- Combine large eggs and cottage cheese in a mixing bowl, whisk until smooth.
- Sprinkle in salt and pepper to taste, stirring well.
- Pour the mixture into the greased muffin tin, filling each cup about ¾ full.
- Add your desired vegetables or cheeses on top of the mixture.
- Bake for about 20 minutes until set and lightly golden.
- Remove from oven, cool for a few minutes, and gently pop them out of the tin.
