- Preheat your oven to 350°F (180°C) and prep an 8-inch square baking pan with parchment paper or greasing.
- In a mixing bowl, combine 1 cup of flour, 1/2 cup of butter, and 1/4 cup of sugar until it resembles coarse crumbs. Press into the pan and bake for 15 minutes until golden.
- Cream together 1/4 cup of butter and 1/2 cup of sugar until fluffy. Add 1 egg, then fold in 1 can of crushed pineapple and 1/2 cup of shredded coconut.
- Spread the filling over the baked crust, sprinkle with remaining coconut, and bake for an additional 25 to 30 minutes until set.
