Ingredients

For the Veggies
  • 1.5 cups Corn Kernels Fresh corn is best, but canned or frozen can work.
  • 1.5 cups Cherry Tomatoes Halved for easier eating.
  • 0.5 of a small onion Red Onion Can substitute with green onions.
  • 2 Tbsp Cilantro Finely chopped, use both leaves and stems.
  • 1-2 Avocado Diced, add just before serving to prevent browning.
For the Dressing
  • 0.5 cup Plain Greek Yogurt Non-fat options are good substitutes.
  • 0.25 cup Fresh Lime Juice Adjust the quantity based on your taste preferences.
  • 2 Garlic Cloves No need to mince as they’ll be blended.
  • 0.5 tsp Salt Season to taste.
  • 0.125 tsp Cayenne Adds a touch of spice.
For the Topping (Optional)
  • Cotija Cheese Can substitute with feta cheese if unavailable.

Method
 

Preparation Steps
  1. In a food processor, combine Greek yogurt, lime juice, cilantro, garlic, salt, and cayenne. Blend until smooth and creamy, then refrigerate.
  2. Bring a large pot of salted water to a boil and cook bow tie pasta according to package instructions, usually around 8-10 minutes. Drain and rinse under cold water.
  3. Cook corn kernels in boiling water for 1.5 to 2 minutes until tender, then drain and let cool. Halve cherry tomatoes, dice red onion, and chop cilantro.
  4. In a large bowl, combine the cooled pasta, corn, cherry tomatoes, onion, and cilantro. Pour the dressing over and toss until well-coated.
  5. Dice avocado and fold into the salad just before serving. Sprinkle with cotija cheese if desired, and serve immediately.
