- Preheat your oven to 400°F (200°C).
- Wash and peel the parsnips, then cut them into uniform baton shapes, about 1 inch thick.
- Place the cut parsnips onto a baking sheet that has been lightly sprayed with cooking oil.
- Drizzle the parsnips with olive oil and sprinkle with kosher salt and freshly ground black pepper. Toss until well coated.
- Roast the parsnips for 20 to 25 minutes, checking for doneness at 15 minutes.
- In a saucepan over medium heat, combine apple cider and brown sugar and bring to a boil. Simmer for 10 minutes until it thickens.
- Pour the glaze over the parsnips and return to the oven for another 10 to 12 minutes.
- Transfer the glazed parsnips to a serving platter and garnish with chopped parsley if desired.
