Preparation Steps
- In a large mixing bowl, combine flour, sugar, ground cinnamon, baking powder, and a pinch of salt. Whisk to blend thoroughly.
- In a separate bowl, mix buttermilk, egg, vegetable oil, and vanilla extract until smooth.
- Gently pour the wet mixture into the dry ingredients and stir until just combined. Don't overmix.
- Preheat a nonstick skillet over medium heat for about 5 minutes. Optionally, coat with vegetable oil.
- Pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface, about 2 minutes.
- Flip pancakes and cook for 30 seconds to 1 minute until golden brown.

- Brush warm pancakes with melted butter and dredge in cinnamon sugar.
