Method
 

Preparation Steps
  1. In a large mixing bowl, combine flour, sugar, ground cinnamon, baking powder, and a pinch of salt. Whisk to blend thoroughly.
  2. In a separate bowl, mix buttermilk, egg, vegetable oil, and vanilla extract until smooth.
  3. Gently pour the wet mixture into the dry ingredients and stir until just combined. Don't overmix.
  4. Preheat a nonstick skillet over medium heat for about 5 minutes. Optionally, coat with vegetable oil.
  5. Pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface, about 2 minutes.
  6. Flip pancakes and cook for 30 seconds to 1 minute until golden brown.
  7. Prepare the cinnamon sugar by mixing sugar and ground cinnamon together.
  8. Brush warm pancakes with melted butter and dredge in cinnamon sugar.
