  • 1 cup Freshly Squeezed Lemon Juice about 4-6 lemons
  • 0.5 cup Granulated Sugar substitute with honey or agave syrup if desired
  • 4 cups Cold Water consider using sparkling water for fizz

Method
 

Step-by-Step Instructions
  1. Peel and slice 2 medium cucumbers into thin rounds. Blend the slices on high for about 30 seconds until smooth.
  2. Strain the blended cucumber puree through a fine mesh sieve into a pitcher, pressing the pulp for maximum juice extraction.
  3. Add the juice of 4-6 lemons (about 1 cup) and 0.5 cup of sugar to the pitcher. Stir for 1-2 minutes until the sugar dissolves.
  4. Mix in 4 cups of cold water and stir gently for about 1 minute to blend the flavors.
  5. Chill the pitcher in the refrigerator for at least 1 hour to enhance the flavors.
  6. Serve over ice and garnish with cucumber slices, lemon wedges, and mint if desired.
