  • 1 inch Fresh Ginger Grated
  • 1/4 cup Warm Water To adjust consistency

Step-by-Step Instructions
  1. In a medium bowl, combine chicken, soy sauce, cornstarch, and garlic. Marinate for 10 minutes.
  2. Heat oil in a skillet Over medium-high heat. Cook the marinated chicken for 6-8 minutes until cooked through.
  3. Add more oil to the skillet and heat. Spread chilled rice evenly across the skillet.
  4. Cook rice undisturbed for 5-7 minutes, flipping occasionally until crispy.
  5. Whisk together peanut butter, lime juice, honey, ginger, and warm water until smooth.
  6. In a large bowl, combine the crispy rice, chicken, cabbage, carrots, cucumber, green onions, and cilantro. Toss gently.
  7. Drizzle dressing over the salad and toss gently to coat.
