  2. Roast the Nuts - Preheat the oven to 350°F (175°C) and roast the nuts for 8–10 minutes.
  3. Beat the Egg Whites - In a stand mixer, beat egg whites and salt until soft peaks form, about 3-4 minutes.
  4. Make the Sugar Syrup - Combine sugar, corn syrup, and water, cooking until the mixture reaches 250°F (121°C).
  5. Combine Syrup with Egg Whites - Gradually pour hot syrup into egg whites; whip until thick and glossy, about 6–8 minutes.
  6. Fold in Flavors and Nuts - Fold in vanilla extract, nuts, and optional dried fruits, then transfer to the baking dish.
  7. Chill the Nougat - Refrigerate for at least 2 hours until firm.
  8. Prepare the Chocolate Coating - Melt chocolate chips and coconut oil together until smooth.
  9. Dip or Drizzle the Chocolate - Cut nougat into bars, then dip or drizzle with chocolate.
  10. Store or Serve - Once chocolate has hardened, store in an airtight container or serve immediately.
