Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, and salt.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in egg and vanilla until fully combined.
  5. Gradually add dry ingredients to the creamed mixture.
  6. Scoop dough into small disks on the prepared baking sheet, flattening each slightly.
  7. Bake for 10-12 minutes until edges are firm and centers are underbaked.
  8. While cookies cool, melt chocolate chips and coconut oil together in a microwave-safe bowl.
  9. Stir in chow mein noodles until well-coated, then spoon onto cooled cookies to form nests.
  10. Fill the nests with pastel candy eggs or mini chocolate eggs for decoration.
