Step-by-Step Instructions
  1. Prepare Cherry Mixture: Pit and chop cherries. Combine with sugar in a saucepan over medium heat. Cook until bubbly, then let cool.
  2. Thicken Mixture: Mix cornstarch with water until smooth. Stir into the cherry mixture on low heat until thickened.
  3. Make Amaretto Mixture: Combine water and sugar in a saucepan until dissolved. Cool slightly and add amaretto or non-alcoholic alternative.
  4. Prepare Mascarpone Cream: In a stand mixer, beat mascarpone, sugar, egg yolks, whipping cream, and vanilla until fluffy.
  5. Assembly: Dip lady fingers in amaretto mixture, layer with cherry mixture and mascarpone cream in a pan. Repeat layers.
  6. Chill: Cover and refrigerate for at least 4 hours or overnight for best flavor melding.
  7. Serve: Remove from fridge, whip cream, spread on top, dust with toppings and enjoy!
