Step-by-Step Instructions
  1. Combine warm water, active dry yeast, and granulated sugar in a medium bowl. Let sit for about 5 minutes until frothy.
  2. In a large bowl, whisk together all-purpose flour and salt. Gradually add yeast mixture, stirring until a shaggy dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and slightly tacky.
  4. Place kneaded dough in a greased bowl, cover, and let rise in a warm area for about 1 hour until doubled in size.
  5. Preheat oven to 450°F (230°C) and prepare baking sheets with parchment paper.
  6. Bring 10 cups of water to a boil in a pot, add baking soda, and stir until dissolved.
  7. Punch down the dough and divide into 8 pieces. Roll each into a rope, wrap around a hot dog with cheese, and seal.
  8. Boil each pretzel dog in the pretzel bath for 30 seconds on each side. Remove and drain briefly.
  9. Brush with beaten egg and sprinkle with coarse salt. Bake for 12-15 minutes until golden brown.
  10. Allow to cool slightly on a wire rack before serving with dipping sauces.
