- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Spread approximately 2 tablespoons of sugar-free pizza sauce evenly over each low-carb tortilla.
- Sprinkle shredded mozzarella cheese over the sauce and place 4-5 slices of pepperoni on top.
- Sprinkle grated Parmesan cheese, dried oregano, and garlic powder over the toppings. Roll each tortilla tightly.
- Place the rolled tortillas seam-side down on the baking sheet and brush tops lightly with olive oil.
