Step‑by‑Step Instructions for Dorito Casserole
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or non-stick spray.
  2. In a medium skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and sauté for about 4-5 minutes until translucent. Add minced garlic for the last minute.
  3. In a large mixing bowl, combine cream of chicken soup, sour cream, Mexican cheese blend, and taco seasoning. Mix thoroughly to create a smooth base.
  4. Add cooked chicken, Rotel tomatoes, diced green chiles, black beans, corn, and sautéed onion and garlic to the creamy mixture. Stir until evenly incorporated.
  5. Crush half of the Nacho Cheese Doritos and layer them at the bottom of the greased baking dish.
  6. Spread the creamy chicken mixture evenly over the layer of Doritos.
  7. Bake for 20 minutes, then remove from oven and sprinkle remaining crushed Doritos and an additional cup of shredded cheese on top.
  8. Return the casserole to the oven for 5 more minutes until the cheese is melted and bubbly. Let cool slightly and garnish with parsley.
