Step‑by‑Step Instructions for Dorito Casserole
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or non-stick spray.
- In a medium skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and sauté for about 4-5 minutes until translucent. Add minced garlic for the last minute.
- In a large mixing bowl, combine cream of chicken soup, sour cream, Mexican cheese blend, and taco seasoning. Mix thoroughly to create a smooth base.
- Add cooked chicken, Rotel tomatoes, diced green chiles, black beans, corn, and sautéed onion and garlic to the creamy mixture. Stir until evenly incorporated.
- Crush half of the Nacho Cheese Doritos and layer them at the bottom of the greased baking dish.
- Spread the creamy chicken mixture evenly over the layer of Doritos.
- Bake for 20 minutes, then remove from oven and sprinkle remaining crushed Doritos and an additional cup of shredded cheese on top.
- Return the casserole to the oven for 5 more minutes until the cheese is melted and bubbly. Let cool slightly and garnish with parsley.
