Step-by-Step Instructions
- Preheat your oven to 375°F (190°C).
- Brown 1 pound of ground beef in a large skillet over medium heat for about 5-7 minutes. Drain excess grease and set aside.
- In a large mixing bowl, stir together the cooked ground beef, 1 can of corn, 1 packet of ranch seasoning mix, 1 teaspoon of garlic powder, and a pinch of black pepper. Let sit for 2 minutes.
- Add 1 cup of milk, ½ cup of sour cream, and 1 cup of shredded cheddar cheese to the beef mixture. Stir until the cheese melts and the sauce is creamy, about 3-5 minutes.
- Fold in 12 ounces of cooked rotini pasta into the creamy beef mixture. Transfer into a greased 9x13-inch baking dish.
- Sprinkle 1 cup of shredded cheddar cheese and crushed Ritz crackers on top. Bake for 20-25 minutes until bubbly and golden brown.
- Remove from the oven and let cool for about 5 minutes before serving.

Notes
Always cook the rotini to al dente. Taste the creamy sauce before combining with the pasta; add more ranch seasoning if needed.
