- In a small bowl, mix together Dijon mustard, mayonnaise, and honey until smooth.
- Spread softened butter on one side of each slice of sourdough bread.
- Lay the buttered side of one slice of sourdough down, spread the mustard mixture onto the unbuttered side, and top with turkey, cheddar, and bacon.
- Heat a non-stick skillet over medium heat and place the assembled sandwiches in it, pressing down gently.
- Flip the sandwiches after the first side is golden, cooking the other side until golden and cheese melts.
