  • 1 lb Firm White Fish Fillet can be substituted with tilapia, salmon, or cod
  • 1 tbsp Lime Juice plus more to serve
  • 1/4 tsp Salt plus 1/2 tsp for broth
  • Black Pepper to taste
  • 1 tbsp Olive Oil plus 1.5 tbsp for broth
  • 2 Garlic Cloves minced
  • 1 Small Onion finely diced (brown/yellow/white)
  • 1 large Red Capsicum/Bell Pepper sliced
  • 1.5 tsp Sugar either brown or white sugar works well
  • 1 tbsp Cumin Powder can be substituted with coriander
  • 1 tbsp Paprika
  • 1 tsp Cayenne Pepper optional
  • 14 oz Coconut Milk use full-fat for the creamiest broth
  • 14 oz Canned Crushed Tomatoes
  • 1 cup Fish Broth/Stock chicken or vegetable stock can be used
  • 3 tbsp Fresh Cilantro/Coriander plus more for garnish

Method
 

Step-by-Step Instructions
  1. Marinate fish by combining firm white fish fillet cubes with lime juice, olive oil, salt, and black pepper. Cover and refrigerate for 20 minutes.
  2. Sear fish in a hot skillet with olive oil for 2-3 minutes until golden. Remove and set aside.
  3. In the same skillet, sauté minced garlic and diced onion with olive oil for 1.5 minutes.
  4. Add sliced red bell pepper and cook for an additional 2 minutes.
  5. Mix in sugar, cumin powder, paprika, cayenne, salt, coconut milk, crushed tomatoes, and fish stock. Simmer on low for 15-20 minutes.
  6. Return seared fish to the skillet and allow to simmer for 2 more minutes. Stir in extra lime juice.
  7. Serve the stew hot, garnished with fresh cilantro.
