Method
 

Preparation Steps
  1. In a mixing bowl, combine old-fashioned rolled oats, your choice of almond, coconut, or cashew milk, and coconut yogurt. Mix well until fully immersed.
  2. In a small saucepan over medium-low heat, combine fresh blueberries, chia seeds, maple syrup, lemon juice, and vanilla extract. Cook for 5-7 minutes until the blueberries burst and a compote forms.
  3. Remove from heat and allow the compote to cool for about 10 minutes.
  4. Layer your Blueberry Pie Overnight Oats by spooning the oat mixture into jars, topping with chia compote, and sprinkling granola on top.
  5. Cover and refrigerate overnight to let the flavors meld together.
