Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan with non-stick spray or parchment paper.
  2. Mash the overripe bananas in a large mixing bowl until smooth. Mix in almond or oat milk, maple syrup, and melted vegan butter until well blended.
  3. Sift in the all-purpose flour and almond flour gradually, mixing gently to avoid overmixing.
  4. Fold in the fresh blueberries carefully to avoid crushing them.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for about 50 minutes until golden brown and risen.
  6. Cover loosely with foil if the top darkens too quickly while baking.
  7. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  8. If making optional frosting, blend vegan cream cheese, melted butter, and powdered sugar until smooth. Spread on cooled bread.
