For the Chicken
  • 2 lbs Chicken Breasts Cut into chunks
  • 1 tbsp Coconut Oil Any neutral oil can be used
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 large Eggs Non-egg option: buttermilk
  • 1 cup Cornstarch Substitute with potato starch
For the Aromatics
  • 1 medium Onion Shallots can be used as a substitute
  • 1 medium Green Pepper Any colored bell pepper is fine

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a measuring cup, blend together pineapple juice, cane sugar, soy sauce, organic ketchup, red wine vinegar, fresh ginger, garlic powder, red pepper flakes, and salt. Whisk until well combined.
  3. Cut chicken breasts into uniform chunks and season generously with salt and pepper.
  4. In a large skillet, heat coconut oil over medium-high heat.
  5. Dredge each chicken piece in cornstarch, dip in beaten eggs, and fry in the hot skillet until golden brown.
  6. Sauté diced onion and green pepper in the same skillet until softened.
  7. Pour the sautéed onion and pepper mixture evenly over the chicken pieces in the baking dish.
  8. Drizzle the pineapple glaze over the chicken and vegetable mix.
  9. Bake for 30-35 minutes until the chicken is cooked through and the sauce is bubbly.
  10. Remove from the oven and let it rest for a few minutes before serving.
