For the Salmon
  • 4 fillets Salmon Fillet Make sure it’s fresh
  • to taste Salt
  • to taste Pepper
For the Creamy Spinach
  • 300 g Spinach Thawed and drained if frozen
  • 1 medium Onion Yellow or white
  • 2 cloves Garlic Minced
  • ½ cup Sour Cream Greek yogurt is a substitute
For the Topping
  • 1 cup Mozzarella Shredded
  • 1 tablespoon Olive Oil Can use canola or grapeseed oil

Method
 

Step-by-Step Instructions
  1. In a skillet, warm olive oil over medium heat. Add sliced onions and sauté for 3-4 minutes until translucent. Toss in garlic and stir for another 30 seconds.
  2. Add spinach to the skillet and cook for 2-3 minutes, seasoning with salt and pepper. Blend in sour cream until creamy. Remove from heat.
  3. Preheat oven to 175°C (347°F). Slice salmon fillet into portions and season with salt and pepper. Sear each side for 2 minutes in a non-stick skillet.
  4. In a greased baking dish, lay salmon skin-side down. Spread the creamy spinach mixture over each piece. Top with mozzarella cheese.
  5. Bake in the preheated oven for 15-20 minutes until salmon is opaque and cheese is golden. Watch carefully during the last few minutes.
  6. Remove from the oven, let rest for a couple of minutes, then serve with your favorite sides.
