- In a skillet, warm olive oil over medium heat. Add sliced onions and sauté for 3-4 minutes until translucent. Toss in garlic and stir for another 30 seconds.
- Add spinach to the skillet and cook for 2-3 minutes, seasoning with salt and pepper. Blend in sour cream until creamy. Remove from heat.
- Preheat oven to 175°C (347°F). Slice salmon fillet into portions and season with salt and pepper. Sear each side for 2 minutes in a non-stick skillet.
- In a greased baking dish, lay salmon skin-side down. Spread the creamy spinach mixture over each piece. Top with mozzarella cheese.
- Bake in the preheated oven for 15-20 minutes until salmon is opaque and cheese is golden. Watch carefully during the last few minutes.
- Remove from the oven, let rest for a couple of minutes, then serve with your favorite sides.
