- Heat olive oil in a skillet over medium heat. Add sliced onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
- Incorporate thawed and drained spinach into the skillet. Cook for 2-3 minutes, then season with salt and pepper. Mix in sour cream and remove from heat.
