  • 1 medium Onion Sliced; yellow or white onion
  • 2 cloves Garlic Minced
  • 1/2 cup Sour Cream Or Greek yogurt as a lower-fat alternative
For the Topping
  • 1 cup Mozzarella Cheese Shredded; can substitute Gouda
  • 2 tablespoons Olive Oil For sautéing

Method
 

Step-by-Step Instructions
  1. Heat olive oil in a skillet over medium heat. Add sliced onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
  2. Incorporate thawed and drained spinach into the skillet. Cook for 2-3 minutes, then season with salt and pepper. Mix in sour cream and remove from heat.
  3. Preheat oven to 175°C (347°F). Season salmon fillets with salt and pepper. Sear each fillet for 2 minutes on each side in a separate skillet.
  4. Lightly grease a baking dish. Place seared salmon skin-side down and spread creamy spinach mixture over each piece. Top with shredded mozzarella cheese.
  5. Bake for 15-20 minutes until salmon flakes easily with a fork and mozzarella is golden and bubbly.
  6. Remove from oven and let rest for a couple of minutes before serving with your favorite sides.
